NO BAKE CREME BRULEE
Makes about 18 6oz. Ramekins
12 eggs yolks
1C sugar
6C cream
2T vanilla
4T butter cut into pieces
In a large mixing bowl beat together egg yolks and sugar until thick and light yellow. Bring cream to a boil. Strain cream through a sieve. On medium speed slowly add cream to egg mixture until well incorporated. Pour mixture into stainless pot over low heat and stir constantly until it coats the back of a spoon. Remove from heat, add vanilla and whisk in butter pieces one at a time. Pour into ramekins and let set overnight.
